Flourless Hemp and Nut Butter Cookies

Rose’s favoured cookies :-)
1 Cup Hemp Hearts
1/2 cup raw cane sugar
1 cup nut butter (I use almond butter or peanut butter)
½ tsp. baking soda
1 pinch of Himalayan Crystal Salt
¼ cup chocolate chips.
¼ cup dried fruit such as raisins, currants or cranberries.
In a large bowl, mix together the hemp seeds, nut butter, sugar, eggs and baking soda. Spoon out table spoon size balls and flatten onto parchment paper. I prefer to coat the baking sheet with butter or coconut butter and sprinkle flour on it.
Bake in oven at 350 degrees until golden brown, about 10-15 minutes.
You may add ¼ cup of ground flax seed to increase the fibre-content.
For very busy folks:
My business keeps me on my toes and I came up with the idea to put the dough into a pie form and baking it for 25 – 30 minutes. After it has cooled down I cut small squares. This way I can always have our home baked cookies, since mixing the dough doesn't take that much out of my time.
