Chocolate Coconut Milk Chia Pudding

2/3 cup WFN Coconut Milk Powder

1 1/4 cups hot water

4 tablespoons WFN Coconut Sugar

2 tablespoons WFN Cacao Powder

1 1/2 tablespoons vanilla

1/4 cup of WFN Chia Seeds

 

In a glass bowl add the coconut milk powder, coconut sugar, cacao powder. With your whisk, break up any lumps before adding hot water. Pour in the hot water and whisk until nice and smooth. Add the vanilla and continue whisking.

 

When it is at desired silkiness, add the chia seeds and whisk the seeds in thoroughly. Let stand at room temeperature for 1 - 2 hours giving it a couple more stirs in the first 15 minutes. There will be chia seeds that will settle on top and if you don't keep them wet, they will dry out and create a skin.

 

Once the chia is fully incorporated into the coconut milk mixture, cover and put aside until ready to serve or put it in the fridge overnight.

 

It's wonderful served with fresh berries, nuts and some fresh WFN coconut whipped cream.
